One expert who has written books that I’d recommend is Steven Levenkron. He has written books aimed at professionals, but has also written two books which aim to explain anorexia/bulimia aimed at teenagers (’The Best Little Girl In The World’ and ‘Kessa’). Steven has a long history of treating anorexia (including treating Karen Carpenter) and these books were written when few people understood the condition.
For an ‘official’ institution, you could try giving the National Association of Eating Disorders a call on 800.931.2271. They’re open office hours Monday to Friday. They recommend this website for books etc. :
